I have been visiting my brother in Seattle this month. I looked through his pantry for something to make and found an enormous bag of dried chickpeas he had purchased as Costco. So I thought, let’s try to make a dent in this bag and see how it turns out!
We modified this recipe from one on the back of the bag. I couldn’t believe that there was 19 g of protein per serving!
For less prep, you can buy canned chickpeas and just drain and rinse. The dried chickpeas do require an overnight soak and had to be simmered for an hour. It was definitely a labor of love. So I would recommend buying canned, then heating up in a pan of simmering water for a few minutes to warm through.
This would be an excellent, healthy side dish for your next potluck. We enjoyed it over mixed greens and as a side dish.
