Oh my goodness. Meatloaf. To me this is the ultimate in comfort food. It’s so filling and delicious. Bonus, my recipe is not full of sugar! Instead it’s packed with fresh vegetables and protein. All you have to do is dump all the ingredients into a large bowl and mix it up with your clean (or gloved) hands. My tip is to not form it into tall loaf. Instead form it into a rectangle about 2 inches deep. It cooks faster and more evenly. I hope you enjoy!
